Old Fashioned Strawberry Shortcake
 
INGREDIENTS:
3 eggs
1 cup white sugar
1 cup all-purpose flour
1 tablespoon milk
1 tablespoon butter, melted

1 cup heavy cream
2 tablespoons white sugar
1/2 teaspoon vanilla extract
1/2 teaspoon coffee flavored liqueur

2 pints fresh strawberries, halved
Prep Time: 20 Minutes

Cook Time: 30 Minutes

Ready In: 50 Minutes

DIRECTIONS:
1. Butter and flour an 8x8 inch baking dish and line bottom with parchment paper.

2. In a medium bowl, beat eggs with 1 cup sugar until foamy. Fold in flour. Stir in milk and butter. Pour into prepared pan.

3. Place pan on a rack in a hot steamer. Steam over high heat 25 to 30 minutes, until cake springs back when touched lightly in center. Invert on wire rack to cool completely.

4. Whip cream with 2 tablespoons sugar until stiff peaks form. Fold in vanilla and liqueur.

5. Slice cooled cake into three layers. Layer with whipped cream and strawberries. Serve at once.

Strawberry Pizza
 
INGREDIENTS:
1 cup all-purpose flour
1/2 cup confectioners' sugar
1/2 cup butter, melted
1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
2 1/2 cups strawberries, sliced
1/2 (2 ounce) package strawberry Danish dessert mix (e.g. Junket)
1 cup water
 
Prep Time: 10 Minutes

Cook Time: 15 Minutes

Ready In: 25 Minutes

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).

2. In a medium bowl, mix together flour and confectioners' sugar. Stir in melted butter. Press mixture evenly into a 12 inch pizza pan.

3. Bake in preheated oven for 15 minutes. Allow to cool.

4. In a small mixing bowl, beat together cream cheese and white sugar until smooth. Spread over cooled crust. Arrange strawberries over cream cheese layer.

5. Combine custard mix and water in a small saucepan. Bring to a boil while stirring frequently. Boil and stir 1 minute. Pour mixture over strawberry layer. Chill before serving.

Chocolate Covered Strawberries
 
INGREDIENTS:
16 ounces milk chocolate chips
2 tablespoons shortening
1 pound fresh strawberries with stems

 
Prep Time: 15 Minutes

Ready In: 25 Minutes

Servings: 24
DIRECTIONS:
1. Insert toothpicks into the tops of the strawberries.

2. In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries into the chocolate mixture.

3. Turn the strawberries upside down and insert the toothpick into styrofoam for the chocolate to cool.
